With all the surplus zucchini at this time of year, this can be a side dish or an appetizer for that summer get together. I have had people enjoy these that are not zucchini fans!

These zucchini chips are soft inside with a crunchy outside. It's a very savory side dish. Since these are baked, not fried, and lightly seasoned, you taste the sweetness of the zucchini. We love the salty taste from the Parmesan cheese. This is a great summertime side dish. But, they'd make a nice snack too.

Ingredients For zucchini chips
- INGREDIENTS

2 mdfresh zucchini, cut into 1/4" slices

1/4 cdried bread crumbs or Panko bread crumbs

1/4 cgrated Parmesan cheese
-
1/4 tspseasoned salt
-
1/4 tspgarlic powder
-
1/8 tspground black pepper
-
2well beaten egg whites
How To Make zucchini chips

1Preheat oven to 450 degrees. Line baking sheet with parchment paper. Spray parchment paper with non-stick cooking spray. Set prepared baking sheet aside.

2Beat egg whites well, set aside.

3Slice zucchini in 1/4" slices, set aside.

4Combine bread crumbs, cheese, garlic powder, seasoned salt, and pepper in a plastic zip-top bag. Shake well to combine ingredients.

5Dip zucchini slices in the beaten egg whites, coating well.

6Place in bag with bread crumb mixture.

7Shake the bag to coat the zucchini slices. Before removing from the bag, press the slices into the bread crumb mixture so both sides are coated well.

8Place slices on the parchment paper cover baking sheet.

9Place in preheated oven and bake for 8 minutes.

10Turn zucchini slices over.

11Bake for another 8 minutes. Both sides of the zucchini slices should be golden and crispy. Baking time can vary based on individual oven.

12Serve and enjoy!! Can be served as an appetizer with marinara sauce, salsa, or dip of choice. I have served this as a side with dinner.
