I was given this recipe many years ago by a neighbor of mine when we lived in Temple NH. I make it every year and it is a family favorite. Hope you enjoy it too.

Ingredients For zucchini casserole
-
4medium sized zucchini sliced to 1 inch thick
-
1 cmayonnaise
-
1 cgrated parmesan cheese
-
1 smonion
-
1 tspdijon mustard
-
2 lgeggs
-
1 ccrushed ritz cracker
-
1/2 stick melted butter
-
pinch off salt and blk pepper
How To Make zucchini casserole
-
1pre heat oven 350 deg. Bring salted water to boil. Add zucchini for aprox 3 min. Drain well. saute chopped onion till sl. translucent. In a blender or food processor add mayo, parm. cheese. dijon mustard, and eggs pinch of salt and pepper and blend till well mixed. Put zucchini in a buttered 8x11 baking dish. Mix in onions. Pour blended ing over top. Bake for 25min. remove from oven and top with crushed ritz cracker and melted butter return to oven for 5 min. serve warm.
