Even if you don't like zucchini, this casserole is excellent and so easy to make! I used my Cuisinart with the slicing blade to quickly slice the zucchini.

Ingredients For zucchini casserole

4 cthinly sliced zucchini

1 cchopped onion
-
1/3 cbutter
-
1/2 cchopped parsley

1/2 tspsalt

1/4 tsppepper
-
1/4 tsporegano
-
2beaten eggs
-
8 ozshredded mozzarella
-
8 ozpkg. of crescent rolls
How To Make zucchini casserole

1Saute zucchini and onions in butter for 10 minutes or until soft.

2Add salt, pepper and oregano. Remove from heat and stir to cool (about 10 minutes).

3Add cheese and eggs.

4Press crescent dough onto bottom of 9x13 pan.

5Pour mixture on top and bake at 350 degrees for about 20-25 mins., or until lightly browned on top.
