zucchini omelette
This is a recipe that I love to make any time of the year. It is easy, it is a great side dish to just about any type of meal, and it is one of my all time favorites!

Ingredients For zucchini omelette

2 pounds zucchini, cut into 1/2" pieces

1/3 cup margarine

1/8 teaspoon garlic powder

1 teaspoon basil

2 teaspoons salt

1/2 teaspoon accent® seasoning mix

1/2 teaspoon pepper

1/4 cup grated parmesan cheese

4 large eggs
How To Make zucchini omelette

1Saute squash and garlic in butter 7-8 minutes. Add all seasonings and cook until crispy tender. Combine slightly beaten eggs and vegetables. Pour into buttered 1 1/2 quart casserole. Bake at 400 degrees 25-30 minutes.
