This is another recipe from the Vegetarian Express. They have some really nice recipes. I am not a vegetarian, but I do love veggies! I am considering adding some kind of spice or some seasoning salt, to bring out the best in this salad. The seasoning salt would replace regular salt, for me.

Ingredients For zucchini-broccoli relish salad

  • 2 md
    zucchini, quartered lengthwise and diced
  • 1 c
    finely chopped broccoli florets
  • 1 md
    red bell pepper, cut into strips
  • 1/4 c
    sweet pickle relish
  • 1/2 c
    reduced-fat mayonnaise or commercially prepared tofu mayonnaise
  • seasoning salt or regular salt to taste
  • black pepper to taste
