zucchini appetizers

I've had great success with this recipe. It's easy to make, and a good way to get veggies in your kids. The recipe makes 48 individual squares, or cut into larger pieces as a side dish.

Ingredients For zucchini appetizers

  • 3 c
    zucchini, thinly sliced
  • 1 c
    biscuit mix
  • 1/2 c
    onion, finely chopped
  • 1/2 c
    grated parmesan cheese
  • 2 Tbsp
    snipped parsley
  • 1/2 tsp
    dried oregano
  • 1 clove
    garlic, finely chopped
  • 1/2 c
    butter or vegetable oil
  • 4
    eggs, slightly beaten

How To Make zucchini appetizers

    Heat oven to 350 degrees. Grease a 9x13" pan.

    Layer the sliced zucchini in the pan.

    Combine remaining ingredients in a bowl and mix well. Pour into pan covering the zucchini.

    Bake until golden brown, about 25 minutes. Cut into squares and serve warm.
