A very delightful vegetable casserole dish that is a grand accompanyment to any BBQ ribs/chicken/brisket meal. It takes a little time to prepare but is worth the effort. Stores and reheats well.

Ingredients For yellow squash casserole

6 csliced yellow squash cooked and drained

2 lgegg yolks or use egg beaters
-
1 csour cream (fat-free is okay)

2 Tbspwhite flour
-
2 lgegg whtes stiffy beaten or use egg white substitute

6 slicebacon cooked crispy and drained
-
1 1/2 cgrated cheese (colby or cheddar)

1 Tbspbutter
-
1/4 cbread crumbs ( i use italian bread crumbs)
How To Make yellow squash casserole

1Cook and drain sliced squash and set aside. Cook bacon in microwave until crisp and place on paper towel to drain. Mix egg yolks, sour cream, flour.

2In a separate bowl beat egg whites until stiff peaks form.

3In a greased casserole dish combine squash with yolks/sour cream/flour mixture. Crumble bacon and add to squash mixture. Fold in egg whites gently.

4Melt butter in microwave and drizzle over squash mixture. Top with bread crumbs. Bake 20 minutes at 350 degrees. Enjoy.
