white bean patty-cakes

I was thinking about something to munch-on while on the computer. I came up with this. You can eat it as a snack or appetizer or you can eat it as a side. If you eat it as a appetizer, or a snack, you can use a sauce (I used Kraft creamy Horseradish sauce). My wife thought it was very good.

Ingredients For white bean patty-cakes

1/2 lbgreat northern beans, cooked and drained and smashed or 2 cans (15-oz each) of great northern beans, drained and smashed

2 lgeggs

1 tspsalt

1 tsppepper

1/2 conion, finely chopped

1/2 tspred pepper flakes

1/4 cparmesan cheese, grated

2 Tbspself rising corn mill

1/3 cself rising flour

2/3 cvegetable oil
-
kraft creamy horseradish sauce (optional)
How To Make white bean patty-cakes

1Take the beans and drain them.

2Smash the beans with a fork.

3Get the rest of the ingredients ready.

4Combine all ingredients except for oil in a medium size bowl.

5Mix well until consistency has been reached. You may have to add a little more flour. Place oil in a large skillet and heat on medium high.

6Take and form a patty about the size of a hockey putt.

7Place patties into hot skillet.

8Cook one side (about 8-10 minutes)until brown, flip over gently try not to break them, and cook (about 8-10 minutes) until brown.

9Remove from skillet and place them on a paper towel lined plate. If you are eating them as a snack, place creamy horseradish sauce in a small bowl. Place on a small plate alone with white bean patties and enjoy. Also great as a appetizer with sauce, or as a side dish with fry fish.
