Wow, this is a flavorful summer salad. The blend of sweet watermelon, peppery arugula, and creamy Feta cheese are all brought together with a tangy balsamic glaze. Serve this alongside the grilled chicken for a fabulous summer side dish. We found balsamic glaze with vinegar at our store. But, if you can't find it, it's very easy to make at home.

Ingredients For watermelon, tomato, feta and arugula salad w/ balsamic glaze

1 pkgbaby arugula (5 oz)

2 lgtomatoes, washed and cut up into 1 inch cubes

1 pkgcrumbled Feta cheese (7 oz)

8 cseedless watermelon cut into 3/4 inch cubes

2 Tbspbalsamic vinegar glaze
How To Make watermelon, tomato, feta and arugula salad w/ balsamic glaze

1Chop tomatoes and watermelon.

2Mix all ingredients together and drizzle with balsamic glaze and sprinkle with pepper. I use extra balsamic glaze but use it to taste. :)

3Balsamic glaze can usually be found in the vinegar section of your local grocery store but if you can't find it, you can make it yourself: Boil 3/4 cup balsamic vinegar in a small saucepan until reduced to 3 tablespoons (about 6 to 7 minutes).
