watermelon and cucumber salad
This one of my favorite recipe to serve at Thanksgiving and Christmas--I alway serve it in the summertime when the melons are in, but found it make a nice crisp salad at the holiday table too! Crunchy and sweet and a little tart at the same time..

Ingredients For watermelon and cucumber salad

1/2 capple cider vinegar

1 cwater or 1/2 water and 1/2 fruit juice

1/2 cgranulated sugar or to taste

1 Tbsppoppy seeds, optional

to tastesalt and pepper or just a dash of each

1 bunchscallions, trimmed and chopped
-
3 cseedless watermelon balls or small chunks

2 mdenglish cucumbers, peeled, seeded and sliced into small slices
How To Make watermelon and cucumber salad

1Mix together the vinegar,water, sugar and poppy seeds(may use nuts instead as desired)in a bowl and season with salt and pepper to taste. Stir in the chopped scallions.

2Place the melon balls and cucumber in a large bowl and pour the marinade over top evenly. Serve immediately or cover and refrigerate a few hours before serving. Toss gently before serving.If you like toss in a few chopped raw cranberries too.
