watermelon and cucumber salad

This one of my favorite recipe to serve at Thanksgiving and Christmas--I alway serve it in the summertime when the melons are in, but found it make a nice crisp salad at the holiday table too! Crunchy and sweet and a little tart at the same time..

Ingredients For watermelon and cucumber salad

  • 1/2 c
    apple cider vinegar
  • 1 c
    water or 1/2 water and 1/2 fruit juice
  • 1/2 c
    granulated sugar or to taste
  • 1 Tbsp
    poppy seeds, optional
  • to taste
    salt and pepper or just a dash of each
  • 1 bunch
    scallions, trimmed and chopped
  • 3 c
    seedless watermelon balls or small chunks
  • 2 md
    english cucumbers, peeled, seeded and sliced into small slices

How To Make watermelon and cucumber salad

  • 1
    Mix together the vinegar,water, sugar and poppy seeds(may use nuts instead as desired)in a bowl and season with salt and pepper to taste. Stir in the chopped scallions.

    Place the melon balls and cucumber in a large bowl and pour the marinade over top evenly. Serve immediately or cover and refrigerate a few hours before serving. Toss gently before serving.If you like toss in a few chopped raw cranberries too.
