My husband and I are big Auburn football fans, so when I see a recipe with War Eagle, Tiger or Auburn in the title it makes me try it. This is a great way to get kids to eat their vegetables. Just a little different than my honey glazed carrots.

Ingredients For war eagle carrots

4 csliced carrots

1 Tbspbutter, melted

1/3 capricot preserves

1/4 tspkosher salt

1/4 tsporange zest
-
1/2 tspfreshly grated nutmeg

2 tspfreshly squeezed lemon juice
How To Make war eagle carrots

1Cook carrots until tender in enough salted water to cover (about 10 minutes). Drain.

2Combine remaining ingredients, stirring until well blended. Spoon over cooked carrots and toss well.

3Serve immediately. War Eagle!
