This is a delicious side dish, especially on Thanksgiving. Goes well at church pot lucks, too! Make sure folks know it's onions they're eating though ... or there'll be lots of 'waste'. :o)

Ingredients For vidalia onion casserole

  • 4
    vidalia onions, peeled and sliced
  • 5 Tbsp
    margarine
  • 1/2 c
    creamed cottage cheese
  • 1/4 c
    light cream cheese
  • 2 md
    eggs
  • 1 c
    milk
  • salt and pepper, to taste
  • 2/3 c
    grated parmesan cheese

How To Make vidalia onion casserole

  • 1
    Preheat oven to 400°. Spray a baking dish with PAM.

    Saute onions in margarine until transparent, not browned. Place onions in prepared baking dish.

    Mix together cottage cheese and cream cheese; set aside.
  • 4
    Beat eggs; mix in milk.
  • 5
    Combine with cheeses and salt and pepper. Pour over onions and sprinkle with parmesan.

    Bake for 25 minutes, or until golden brown.
