This is a delicious side dish, especially on Thanksgiving. Goes well at church pot lucks, too! Make sure folks know it's onions they're eating though ... or there'll be lots of 'waste'. :o)

Ingredients For vidalia onion casserole

4vidalia onions, peeled and sliced

5 Tbspmargarine

1/2 ccreamed cottage cheese

1/4 clight cream cheese

2 mdeggs
-
1 cmilk
-
salt and pepper, to taste

2/3 cgrated parmesan cheese
How To Make vidalia onion casserole

1Preheat oven to 400°. Spray a baking dish with PAM.

2Saute onions in margarine until transparent, not browned. Place onions in prepared baking dish.

3Mix together cottage cheese and cream cheese; set aside.

4Beat eggs; mix in milk.

5Combine with cheeses and salt and pepper. Pour over onions and sprinkle with parmesan.

6Bake for 25 minutes, or until golden brown.
