OK I know, this has no redeemable qualities, but my grandsons Mike and Dan give thumbs up on this one. It does have veggies in it.

Ingredients For vegtable casserole

  • 2 lb
    sliced zuchinni
  • 1 c
    carrots, coarsely grated
  • 1 lg
    onion, chopped
  • 8 oz
    package herb stuffing mix (pepperidge farm)
  • 1/2 c
    butter
  • 1 c
    condensed cream of chicken or cream of mushroom soup
  • 1 c
    sour cream
  • 2 c
    extra sharp cheddar cheese, grated, and divided

How To Make vegtable casserole

  • 1
    Boil veggies 5 minutes and drain.
  • 2
    Mix sour cream, soup and 1 cup cheddar cheese.
  • 3
    Melt butter, stir in stuffing mix. Spread half on the bottom of a greased casserole.

    Spoon on veggie mix.
  • 5
    Top with rest of stuffing mix, then cheese.

    Bake 30 to 40 minutes in a pre heated 350 degree oven until bubbly ans starting to brown
