1/2 csushi vinegar

1 tspsalt, kosher variety
How To Make veggie essentials: pickled yellow onions

3Use a mandoline, or sharp knife to cut the onion to the desired thickness.

4Chef's Tip: The thickness of the slices will determine how crisp they are... the thicker the crisper.

5Add the sliced onions, to a sealable glass container.

6Add the coconut sugar, vinegar, and salt to a small saucepan, and bring up to a simmer.

7Pour the hot liquid over the onions, and allow them to cool down to room temperature.
