The first time I had this I was at a church dinner and a little 88 year old lady asked me to taste it. I have loved it every since lol. It is great for a Summer side.

Ingredients For veggie crunch

  • 1 can
    navy beans or other beans
  • 1 can
    french style green beans
  • 1 can
    white shoepeg corn
  • 1 c
    chopped bell pepper
  • 1 c
    chopped red onion
  • 1 jar
    pimentos
  • 1 can
    green chilies (optional)
  • 1/4 c
    olive oil
  • 1/2 c
    cider vinegar
  • 2/3 c
    sugar
  • salt
  • pepper

How To Make veggie crunch

  • 1
    Mix all veggies together after draining and rinsing.
  • 2
    Mix oil, vinegar, sugar and seasonings. Pour over the vegetable mixture. Add salt and pepper to taste, sometimes I add a little garlic.

    Mix all ingredients and refrigerate. Enjoy! I like using northern white beans instead of navy beans. You can actually use any type.
