vegeterian green beans w/ peppers & onions

This dish came about because of reduced & sale items on my shopping day. The green beans were only 90 cents and everything else was on sale. What a bargain and a healthy way to eat vegetables. This made a great side dish for dinner and so tasty and economical. Merely pennies per serving and enough for everyone.

Ingredients For vegeterian green beans w/ peppers & onions

  • 2 lb
    fresh green beans-washed & stems removed
  • 1 md
    yellow onon, chopped
  • 5-6
    assorted colored mini sweet peppers,chopped
  • 6 clove
    garlic,slied or minced
  • 2 c
    vegetable stock
  • 3-4 md
    yukon gld potatoes,peeled washed & cubed
  • 1 1/2 Tbsp
    olive oil
  • 1 tsp
    steak easoning

How To Make vegeterian green beans w/ peppers & onions

    Pick through green beans remove stems then wash. You can also cook all of he veggies at one time if so desired.

    Chop assorted mini sweet peppers, garlic & onions and add to green Beans.

    Add to a medium size pot, pour in vegetable stock or water & cook for 10 to 15 minutes till crisp tender, or as desired.

    Using a slotted spoon remove green bean mixture from pot to a separate bowl but reserve the liquid.

    Wash potatoes and add to reserved liquid. Cook over medium high heat till potatoes are tender about 10 to 15 minutes, or as desired.

    Once potatoes are done add the green Beans back into the pot, with a drizzle of olive oil then add in steak seasoning and stir gently. Serve while still hot. ENJOY
