vegeterian green beans w/ peppers & onions
This dish came about because of reduced & sale items on my shopping day. The green beans were only 90 cents and everything else was on sale. What a bargain and a healthy way to eat vegetables. This made a great side dish for dinner and so tasty and economical. Merely pennies per serving and enough for everyone.

Ingredients For vegeterian green beans w/ peppers & onions

2 lbfresh green beans-washed & stems removed

1 mdyellow onon, chopped
-
5-6assorted colored mini sweet peppers,chopped

6 clovegarlic,slied or minced
-
2 cvegetable stock
-
3-4 mdyukon gld potatoes,peeled washed & cubed
-
1 1/2 Tbspolive oil
-
1 tspsteak easoning
How To Make vegeterian green beans w/ peppers & onions

1Pick through green beans remove stems then wash. You can also cook all of he veggies at one time if so desired.

2Chop assorted mini sweet peppers, garlic & onions and add to green Beans.

3Add to a medium size pot, pour in vegetable stock or water & cook for 10 to 15 minutes till crisp tender, or as desired.

4Using a slotted spoon remove green bean mixture from pot to a separate bowl but reserve the liquid.

5Wash potatoes and add to reserved liquid. Cook over medium high heat till potatoes are tender about 10 to 15 minutes, or as desired.

6Once potatoes are done add the green Beans back into the pot, with a drizzle of olive oil then add in steak seasoning and stir gently. Serve while still hot. ENJOY
