Ingredients For vegetable succotash

3/4 cfresh lima beans

1 1/4 cfresh corn

1red bell pepper, seeded and diced

1green bell pepper,seeded and diced

3/4 tspsea salt

1/4 tspfresh ground black pepper

3/4 cwhipping cream

2 Tbspolive oil, light

1/4 cdry white wine

2 Tbspunsalted butter

1 mdtomatoe seeded, peeled and chopped

1 Tbspchopped fresh chives
How To Make vegetable succotash

1place beans in boiling water to cover in a small saucepan, simmer 3 minutes or until crisp and tender. Drain rinse with cold water, and drain

2Sauté corn kernels, chopped bell peppers, salt, and pepper in hot oil in a medium skillet over medium-high heat for 6 minutes or until corn is tender, Add garlic, sauté for 30 seconds. Stir in wine and cook 1 minutes.

3Add whipping cream and beans, reduce heat to medium-lo and simmer, covered 25 to 30 minutes. until beans ore tender. Remove from heat and add butter, and chopped tomatoes, chives and stir just until combined. Enjoy......
