This is a recipe I got from my friend Terry several years ago. We have these veggies at least once a month.

Ingredients For vegetable medley

  • 3 md
    white potatoes, peeled and cubed
  • 1 lg
    red bell pepper, seeded and diced
  • 1 sm
    butternut squash, peeled and cubed
  • 1 md
    sweet potato peeled and cubed
  • 1 md
    red onion, cut in wedges
  • 3 Tbsp
    olive oil
  • 2 Tbsp
    vinegar
  • 2 Tbsp
    minced freshrosemary
  • 1 Tbsp
    minced fresh thyme
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

How To Make vegetable medley

    Preheat oven to 425 degrees.

    In a large bowl, combine the vegetables.
  • 3
    In a small bowl, whisk together the oil, vinegar and seasonings.
  • 4
    Pour the oil mixture over the vegetables and toss gently to coat.
  • 5
    Place the coated vegetables on a jelly roll pan.
  • 6
    Bake uncovered for 30 minutes or until tender, stirring occasionally.
