vegetable medley
This is a recipe I got from my friend Terry several years ago. We have these veggies at least once a month.

Ingredients For vegetable medley

3 mdwhite potatoes, peeled and cubed

1 lgred bell pepper, seeded and diced

1 smbutternut squash, peeled and cubed

1 mdsweet potato peeled and cubed

1 mdred onion, cut in wedges

3 Tbspolive oil
-
2 Tbspvinegar
-
2 Tbspminced freshrosemary
-
1 Tbspminced fresh thyme
-
1/2 tspsalt
-
1/2 tsppepper
How To Make vegetable medley

1Preheat oven to 425 degrees.

2In a large bowl, combine the vegetables.

3In a small bowl, whisk together the oil, vinegar and seasonings.

4Pour the oil mixture over the vegetables and toss gently to coat.

5Place the coated vegetables on a jelly roll pan.

6Bake uncovered for 30 minutes or until tender, stirring occasionally.
