Are you tired of the coleslaw rut? This carrot slaw has a totally over the top exotic flavor. It almost transports you to a tropical island. I just made it for a picnic and everyone wanted the recipe. I hope you enjoy it as much as we did.

This is definitely not your basic coleslaw recipe. The earthy flavor from the curry shines in every bite. Along with the pineapple and raisins, your taste buds are taken to the tropics. Super easy to prepare, this will be great at your next BBQ. But make sure to make this ahead of time. The flavors get even better after sitting in the fridge for a few hours.

Ingredients For totally exotic carrot slaw

2 lbshredded carrots; I like to shred my own, they are sweeter

3/4 cmayonnaise; not Miracle Whip

1/2 tspkosher salt

1/3 csugar
-
1/2 ccrushed pineapple; drained very well

1/2 cgolden raisins

2 tspcurry powder
-
1 1/2 tspminced garlic

1 1/2 tspminced ginger

1/2 tspcelery seeds or leaves

1/2 cchopped cilantro
How To Make totally exotic carrot slaw

1Shred the carrots if you are doing it yourself.

2Add the shredded carrots to a large bowl.

3In large mixing bowl, whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, ginger, celery seeds or leaves and cilantro.

4Add the carrots and combine.

5Serve immediately or refrigerate for an hour to chill. The longer it sits the more flavorful it becomes.

6You can always add some sugar glazed almond slices for crunch. I have added toasted coconut as well... just sprinkled some over the top. It is awesome!
