Ingredients For tomato halves with blue cheese sauce

  • 6 medium tomatoes (2 lbs.) halved
  • 1/4 cup butter (1/2 stick)
  • 6 oz. blue cheese, crumbled (about 1 1/2 cups)
  • 1/4 cup half and half
  • 2 tbsp. finely chopped parsley
  • 1/2 t. salt
  • 1/4 t. pepper

How To Make tomato halves with blue cheese sauce

    Preheat oven to 250 (slow).

    Melt butter in large skillet over medium high heat. Add tomatoes, cut side down, cook 3 minutes. Turn tomatoes over, cook 2 to 3 minutes. Remove to serving platter. Keep warm in 250 oven

    . Stir cheese, half and half, parsley, salt and pepper into skillet. Cook over medium heat, whisking occasionally until smooth and bubbling slightly. Pour over tomatoes. Serve hot. Serves 6
