If you like greens, you are going to make this over and over. I had this at a party in Atlanta that was catered and it was served with filet mignon. I hope you try it. Soooooo good.

Ingredients For tomato and greens casserole

  • 4 c
    cooked and drained collards or other greens
  • 3-4
    large ripe tomatoes
  • 16 oz
    shredded parmesan cheese
  • 1 1/2 c
    panko
  • 3/4 stick
    butter

How To Make tomato and greens casserole

  • 1
    Spray a medium casserole dish with cooking spray and layer collards, sliced tomatoes and parmesan cheese in 3 layers ending with tomatoes and parmesean cheese.

    Saute panko in the butter and put on top of the casserole.

    Bake for 25 mins at 350.
