I love tomatoes, and squash is my favorite summer vegetable. Being from the South - I do love my fried foods! I've had to learn to cook low-fat for health reasons, and these "almost fried" vegetables are pretty close to the real thing.

A lighter, healthier, and just as delicious way to enjoy green tomatoes and squash. Even though these are baked, not fried, the flour coating gives the vegetables a light, crisp texture. The Panko crumbs add an extra layer of crunchiness. Firm and tangy green tomatoes are a nice contrast to the mellow sweetness of the yellow squash. Seasoned simply with salt and pepper, the natural flavors of the green tomatoes and squash shine bright.

1 1/2 call-purpose flour

2 lgeggs, beaten

1 1/2 cPanko crumbs

How To Make un-fried fried green tomato and squash
Test Kitchen Tips
If you don't have a broiler pan, place a stainless steel rack on top of a baking pan.

1Preheat oven to 400 degrees F. Slice green tomatoes and squash (not too thick). Sprinkle each slice with salt and pepper.

2Set up three bowls - one for flour, the second with beaten eggs, and the third with Panko crumbs. Dip each slice first in flour, then in egg wash, and last in Panko.

3Spray a broiler pan with cooking spray. Place coated vegetables on the pan. Spray tops lightly with cooking spray. Bake for 15 minutes. Remove from the oven. Turn each over, spray what is now the top with cooking spray, and return to the oven. Bake for an additional 15 minutes.
