When I met my husband he owned a Thai restaurant that served the best cucumber salad. It was a family recipe and the chef would not share it, not that I blame him. Fast forward. My garden is really producing cucumbers so i decided to make up my own recipe.

Ingredients For thai cucumber salad

  • 2 md
    cucumbers
  • 1 sm
    red onion
  • 1 md
    carrot
  • 2 Tbsp
    fresh lime juice
  • 1/2 tsp
    crushed red pepper
  • 6 Tbsp
    rice vinegar (substitute white)
  • 1/2 tsp
    kosher salt
  • 4 Tbsp
    sugar
  • 1/2 c
    water

How To Make thai cucumber salad

  • 1
    Dissolve sugar in water over low heat in small saucepan
  • 2
    Slice cucumbers, red onion, and carrot very thinly. (I used a potato peeler on the carrots)

    Stir the lime juice, crushed red pepper, rice vinegar, and salt into vegetables.

    Finish with the sugar water, stirring it all well.

    Refrigerate for at least half hour.
