~ tasty veggie & bean medley ~
A great summer side dish, that I threw together. Some fresh corn off the cob would be great in this as well. Add some meat and it would be hearty enough to serve as a meal. Enjoy!

Ingredients For ~ tasty veggie & bean medley ~

6 slicebacon, chopped and fried - reserving drippings

1 lgsweet onion, fine dice

1 lgclove garlic, minced

1 smeach - yellow squash & zucchini chopped small

1/2 smhead of cabbage, chopped

1 lgchopped tomato
-
1/3 cchicken broth
-
1/2 - 3/4 tspitalian seasoning

1/2 - 3/4 tspsalt
-
1/2 tsppepper
-
1/4 - 1/3 cgrated parmesan cheese

20 ozcannellini beans, drained and rinsed
How To Make ~ tasty veggie & bean medley ~

1In a large skillet or a wok as I used, cook bacon until crisp. Drain. Leave three tablespoons bacon drippings in skillet. Add the garlic and onion and fry until tender. Add the squashes, tomato, broth, salt, pepper, italian seasoning, cabbage and stir. Place a lid over mix and steam for 10 minutes or until crisp tender, stirring occasionally. Stir in the beans and cheese - cook until beans are heated through.

2Serve with crumbled bacon and more cheese if desired. A few pinches if red pepper flakes is great on this as well.
