tasty and different zucchini

This recipe was originally called "Mock Crab Cakes". And they do taste a bit like crab cakes because of the seasoning. But, I think they're good and stand alone as a side dish and I just call them Tasty and Different Zucchini. Its an unusual way to help use up all that summer zucchini.

Ingredients For tasty and different zucchini

  • 2 c
    grated zucchini with skin left on
  • 1 tsp
    old bay seasoning
  • salt and pepper to taste
  • 1 lg
    egg, well beaten
  • 1 Tbsp
    mayonnaise
  • 1 c
    seasoned bread crumbs (panko is good)
  • butter flavored crisco for frying patties

How To Make tasty and different zucchini

  • 1
    Mix together zucchini, Old Bay Seasoning, salt, pepper, egg, and mayonnaise. Form into patties. Coat patties with bread crumbs. Fry in butter flavored Crisco until golden brown. Serve with Ranch dressing or sour cream.
