Ingredients For sweet & tangy carrots

1 1/4 lbcarrots, peeled, halved lengthwise and sliced on the diagonal (1/2" slices)

1 Tbsphoney

1/2 Tbspfresh lemon juice

1 tspdijon mustard

1 1/2 tspcurry powder

2 Tbspoil
-
1/2 Tbspunsalted butter
-
1/2 Tbsplight brown sugar

1/2 cgolden raisins
How To Make sweet & tangy carrots

1In a steamer basket, steam carrots for approx. 10 minutes - remove from heat.

2In a mixing bowl, combine honey, lemon juice, mustard and curry powder.

3In a skillet, saute carrots for 2 minutes in butter over medium-high heat. Sprinkle brown sugar over carrots and stir to combine. Add raisins and cook for another 2 minutes, stirring constantly.

4Add honey mixture and cook carrots for 3 additional minutes. Serve immediately.
