We love sweet potatoes. I cook them when ever I bake a ham, or chicken.

Ingredients For sweet potatoes

  • 3 lg
    yams
  • 1 15oz can
    pineapple, in own juice (not heavy syrup)
  • 1
    lemon
  • 1
    orange
  • 1
    tangerine
  • 1
    apple, granny smith, or fugi (a hard apple)
  • 3/4 c
    sparkling apple cider
  • 3 Tbsp
    maple syrup
  • 4 Tbsp
    turbinado or dark brown sugar
  • 2 Tbsp
    dark molasses
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    allspice
  • 1/2 tsp
    cloves
  • 1 - 2 tsp
    cinnamon
  • 1 Tbsp
    butter
  • 1/4 tsp
    pepper
  • 1/4 - 1/2 tsp
    salt, to taste

How To Make sweet potatoes

    Peel and slice sweet potatoes into rounds, place in cold water. SET ASIDE.

    ZEST orange and lemon. Squeeze juice of orange, lemon and tangerine.

    Peel, core and slice apples. Pour 1/4 cup of lemon juice over apples. Add zest of lemon & orange. POUR orange & tangerine juice over apples & stir well. SET ASIDE

    In a large pot over medium heat, mix Pineapples w/ juice, maple syrup, brown sugar, molasses, and all spices together. Stir well to mix. Bring to a slow boil, cook for 10 minutes

    Add sweet potato slices and cook until JUST tender ~about 10 minutes. Add apples, cook 10 minutes more!
