I love sweet potatoes and yams. The flavor of the sweet and tart of the cranberries is perfect in this dish. This is another recipe I obtained from a cookbook called "Savoring Cape Cod" offered by the Audubon in Wellfleet, MA Submitted by Doris B. Miller

Ingredients For sweet potato cranberry casserole

    good sized sweet potatoes or yams, boiled, peeled, and cut in 3/4-inch slices
  • 1
    12 ounce package fresh cranberries
  • 1 1/4 -1 1/2 cups sugar
  • 1/2 c
    pecan halves
  • 1/4 c
    orange juice
  • 3/4 tsp
    ground cinnamon
  • 1/4 tsp
    ground nutmeg

How To Make sweet potato cranberry casserole

  • 1
    Combine cranberries, sugar, pecan halves, orange juice and spices in a 2-quart casserole. Bake at 375 degrees F for 30 minutes. Stir potatoes into cranberry mixture and bake 15 minutes or until heated through. Serves 8
