sweet potato casserole

I have been making this recipe for 20 years now. When making this recipe I like to double it. Many years ago, we were at my grandmothers for Easter and she had invited friends to dine with us. I brought my Sweet Potato Casserole to be part of the meal. One of the guest made it very clear that he did not like yams at all. Well after trying just a spoonful, he was hooked....after that he would not leave the dish alone.

Ingredients For sweet potato casserole

  • 1 lg
    can of yams, partially drained
  • 1/2 stick
    margarine or butter
  • 1/2 c
    sugar
  • 2 Tbsp
    all purpose flour
  • 2
    eggs
  • 1 tsp
    vanilla
  • TOPPING
  • 1 c
    brown sugar, firmly packed
  • 1 c
    chopped walnuts or pecans
  • 1/2 stick
    margarine or butter
  • 1 tsp
    cinnamon

How To Make sweet potato casserole

  • 1
    Mix the above ingredients at low speed. Pour into a 9x13-inch pan. It will be a thin layer.

    Topping Mix all the ingredients together and add the topping mixture to the top of casserole.

    Bake @ 350 for 25 to 30 minutes.
