This is a excellent change from the calorie packed sugar & butter dish everyone seems to make. If you have a larger family, double the recipe.

Ingredients For sweet potato-carrot skillet

  • 2 lg
    sweet potatoes
  • 3 md
    carrots
  • 1/2 c
    water
  • 1 Tbsp
    olive oil
  • pepper to taste
  • splash
    orange juice

How To Make sweet potato-carrot skillet

  • 1
    Cut sweet potatoes into 3/4" chunks Slice carrots into 1/2" pieces
  • 2
    Put into large skillet with water and olive oil. Sprinkle with pepper to taste. May also sprinkle with salt (I don't use it)

    Cover skillet. Bring to simmer. Cook for 12 to 15 minutes or until tender. Uncover, cook and stir ocassionally, until water boils away Finish off with a splash of orange juice.
