This is a great condiment kind of like chow chow. I also like to have this on top Italian Sausage sandwiches.

Ingredients For sweet 'n' sour veggies

  • 2 c
    sugar
  • 1 c
    cider vinegar (5% acidity)
  • 1-2 Tbsp
    salt
  • 7 c
    cucumber, unpeeled, thinly sliced (about 2 1/4 pounds)
  • 1 c
    onion, sliced
  • 1 c
    green bell pepper, sliced
  • 1 c
    carrots, sliced
  • 1 c
    cauliflower flowerets

How To Make sweet 'n' sour veggies

    Combine sugar, cider vinegar, and salt in a large nonmetal container, stirring until the sugar and salt dissolve.

    Add the cucumber and the remaining ingredients; toss gently to combine.

    Cover and chill 24 hours, stirring occasionally. Store in refrigerator. Serve with a slotted spoon.
