Ingredients For sun dried tomato quinoa

  • 1 tsp
    olive oil
  • 1
    medium onion, cut in half then sliced
  • 2 clove
    garlic, minced
  • 1/2 c
    sun dried tomatoes, dry packed, julienned
  • 3/4 c
    quinoa, dry
  • 2 1/2 c
    vegetable stock (or other stock) you might need more
  • salt to taste
  • pepper to taste

How To Make sun dried tomato quinoa

  • 1
    Add oil to the pot and add onion. Cook until transparent.
  • 2
    Add the garlic and cook just until you smell the garlic.
  • 3
    Add everything else and cook 15-20 minutes until the quinoa is light and fluffy and you can see the white part (the germ?) starting to unravel from the inside.

    Season with salt and pepper to taste and serve.
