This recipe is from the Summit House, a fine dining establishment in Orange County, CA....I love this restaurant and this recipe...It's simple to prepare and definitely pleasing to the taste...I serve it at Thanksgiving dinner; however, it can be made anytime...Hope you enjoy it just as much as I do!

Ingredients For summit house - creamed corn au gratin

  • 12 oz
    whipping cream
  • 1 lb
    frozen kernel corn
  • 1 1/2 Tbsp
    melted butter
  • 1 1/2 Tbsp
    flour
  • 2 Tbsp
    sugar
  • 1/2 tsp
    salt
  • 1 pinch
    white pepper
  • 3 Tbsp
    parmesan cheese

How To Make summit house - creamed corn au gratin

    Combine the whipping cream, corn, salt, sugar, and white pepper in a pot and bring to a boil. Simmer 5 minutes.

    Make a roux from butter and flour, add to corn, mix well and remove from heat.

    Transfer the corn mixture to a casserole sprinkle with parmesan cheese and brown under the broiler.
