I wanted to use the vegetables I had in the fridge before they spoiled and the finished dish was great! My husband said he now likes squash and zucchini! The best part of this is you can vary any amount of any of the vegetables and it will still be good.

Ingredients For summer vegetable stir fry

1yellow squash
-
1green zucchini
-
1green mexican zucchini

1/2small head cabbage

1vidalia or yellow onion

1 cdiced celery
How To Make summer vegetable stir fry

1Dice up the cabbage, onion, celery and one of the zucchini.

2Slice up the other zucchini and squash.

3Put 1 tablespoon oil in large skillet; saute vegetables for about 10 minutes on medium with lid on, stirring occasionally.

4Add 1/4 cup water and turn to low to steam until all veggies are cooked soft to your liking. Salt, pepper and serve.
