My aunt was not one to waste garden produce. She would often use what she had on hand. This is very good and provide plenty of color! By adding more milk or cream this could easily be made into a summer soup! Yellow corn may be used also, but we really like the white.

1medium white onion, chopped

2stalks fresh asparagus, bite-size pieces

1-2medium carrots, cleaned and shredded

4-6ears white summer corn, cut from the cob

1 Tbspbutter

1 Tbspolive oil
-
salt and pepper to taste

1/4 cmilk or heavy cream

savory or other herbs may be added
How To Make summer sunshine

1Heat olive oil and melt butter in a 10-12 inch skillet over medium. When hot, saute' onion 2-3 minutes stirring frequently.

2Add carrots and asparagus; saute' 7-8 minutes. Add corn and stir to blend cooking 4 minutes.

3Add milk or heavy cream. Stir everything together. Season with salt and pepper to your taste. Serve immediately.
