    olive oil
  • 3 tsp
    minced garlic
  • 1 md
    onion, coarsely chopped
  • 3 md
    fresh tomatoes, coarsely chopped
  • 3 md
    zucchini, sliced into rounds
  • 1-1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 tsp
    dried oregano
  • 1 tsp
    dried basil

    Heat oil in lg saucepan over medium heat. Saute garlic and onions until tender.

    Add tomatoes. Cook, stirring until tomatoes soften. Add remaining ingredients and cook until zucchini is soft, about 20 mins.
