Ingredients For summer fried squash

  • 3 lg
    yellow squash
  • 2 c
    hungry jack complete pancake mix
  • 2
    eggs
  • Salt dash
    salt
  • dash
    pepper
  • 1/4 c
    milk

How To Make summer fried squash

    In a bowl mix together the eggs, milk, salt and pepper. Place the pancake mix in a quart size ziplock bag.

    Wash the squash. Slice in circles Dip the squash in the egg mixture
  • 3
    Now place the squash in the pancake mix and shake well till coated. I just dip once. But you can dip in the egg mixture and then again in the pancake mix.

    In a skillet or a deep fryer heat oil. Now drop the squash in the hot oil and fry 2-3 minutes till slightly browned. Drain on a paper towel. Then enjoy.!!
