succotash
I like to make this when I'm in a hurry. And I usually have all of these vegetables on hand, so it's a no brainer. The ginger gives this vegetable dish a unique flavor.

Ingredients For succotash

olive oil

1 smonion, minced

1/2 tspgarlic powder, or 1 clove garlic, minced

1 smred bell pepper, or green pepper if red are not in season

salt and pepper to taste

1/4 tspground ginger

10 ozpkg. frozen corn

10 ozpkg. frozen lima beans

10 ozpkg. frozen green beans
How To Make succotash

1In a saucepan, pour about 2 teaspoons of olive oil, and sauté 1 small minced onion, the garlic powder or minced garlic, 1 minced red bell pepper (or green pepper) and the salt and pepper to taste, covered, over low heat until the onion becomes soft.

2Add 1/4 teaspoon ground ginger, the frozen corn, the frozen lima beans, and green beans.

3Add about 2 cups water, and simmer, covered for about 10 minutes.

4Remove lid and simmer for a few more minutes or until most of the liquid is evaporated.
