stewed okra and tomatoes

This is one of my favorite side dishes. It is good with good ole southern food. I like to make it when I make chicken fried steak and mashed potatoes....fried pork chops and macaronni and cheese; you've got the idea...very comforting and old school.

Ingredients For stewed okra and tomatoes

  • 1
    onion, chopped
  • 3 c
    sliced okra
  • 1 can
    (14.5 oz) diced tomatoes, do not drain
  • 1 tsp
    chopped garlic
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 2 Tbsp
    canola oil

How To Make stewed okra and tomatoes

    In a heavy bottom pot, heat oil
  • 2
    Add the onion and garlic; sauté until tender, about 3 minutes.

    Add the okra and tomatoes, salt and pepper.
  • 4
    Simmer for 15 minutes.

    Note: If needed, add water or chicken stock if the pot becomes too dry.
