I just love this simple, yet delicous recipe. It can be a meatless main dish over rice or as a side dish.

Ingredients For squash & tomato stew

  • 2 lb
    fresh yellow squash
  • 3
    ripe tomatoes, diced or 2 cans diced tomatoes, undrained
  • 1/3 c
    olive oil
  • 1 lg
    onion, diced
  • 1 c
    water
  • 1/4-1 tsp
    salt (if using fresh tomatoes use more, if using canned tomatoes use less)
  • 1/2 tsp
    pepper
  • 1/2 tsp
    allspice
  • 1/2 tsp
    cumin (optional)

How To Make squash & tomato stew

  • 1
    Wash & cut squash into 1"-1 1/2" cubes.

    Saute onion in olive oil until tender.

    Add squash & saute for about 10 minutes.

    Add tomatoes & water.
  • 5
    Add all seasonings.
  • 6
    Cook on medium for about 25 minutes or until tender.
