I just love this simple, yet delicous recipe. It can be a meatless main dish over rice or as a side dish.

Ingredients For squash & tomato stew

2 lbfresh yellow squash
-
3ripe tomatoes, diced or 2 cans diced tomatoes, undrained
-
1/3 colive oil
-
1 lgonion, diced
-
1 cwater
-
1/4-1 tspsalt (if using fresh tomatoes use more, if using canned tomatoes use less)

1/2 tsppepper
-
1/2 tspallspice
-
1/2 tspcumin (optional)
How To Make squash & tomato stew

1Wash & cut squash into 1"-1 1/2" cubes.

2Saute onion in olive oil until tender.

3Add squash & saute for about 10 minutes.

4Add tomatoes & water.

5Add all seasonings.

6Cook on medium for about 25 minutes or until tender.
