These fritters are an amazing alternate to the more traditional fried squash.

Ingredients For squash fritters

  • 2 c
    yellow summer squash, grated
  • 1/4 c
    sweet onion, chopped
  • 1/2 tsp
    salt
  • pepper to taste
  • 6 Tbsp
    self-rising flour
  • 2 lg
    eggs, beaten
  • 2 Tbsp
    butter, melted
  • 1/4 c
    vegetable oil, for cooking

How To Make squash fritters

  • 1
    Mix together squash, onions, salt, pepper and flour. Add eggs and butter and mix thoroughly. Heat oil in skillet. Drop by teaspoonfuls into the skillet and saute until brown on both sides. Drain on paper towels before serving.
