2 cyellow summer squash, grated

1/4 csweet onion, chopped

1/2 tspsalt

pepper to taste

6 Tbspself-rising flour

2 lgeggs, beaten

2 Tbspbutter, melted

1/4 cvegetable oil, for cooking
How To Make squash fritters

1Mix together squash, onions, salt, pepper and flour. Add eggs and butter and mix thoroughly. Heat oil in skillet. Drop by teaspoonfuls into the skillet and saute until brown on both sides. Drain on paper towels before serving.
