Every Summer as soon as squash is ready in the garden. All of the children and grandchildren start wanting to know when I am going to make squash casserole. This is their favorite.

Ingredients For squash casserole

  • 2 c
    cooked squash, drained
  • 1 Tbsp
    minced onion
  • salt & pepper to taste
  • 3
    eggs slightly beaten
  • 1 c
    shredded cheddar cheese
  • 1 c
    pepperidge farms stuffing mix
  • 1 can
    cream of mushroom soup, undiluted

How To Make squash casserole

  • 1
    Cook and drain squash. Mix all of the above ingredients together in a bowl. Place in a greased (or spray with PAM) casserole dish. Top with an additional 1/2 cup each of stuffing mix and shredded cheese. Bake at 350 for 30-35 minutes or until firm.
