Ingredients For spinach/swiss medallions

2 cspinach, fresh, chopped

2eggs, lightly beaten

1 cpotatoes, shredded

1 cswiss cheese, shredded

1/4 conion, shredded

1/4 cheavy cream

salt/pepper to taste
How To Make spinach/swiss medallions

1In a large bowl combine all the ingredients

2spray 2 cupcake pans with oil= 12 individual medallions
-
3cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.

4let cool and serve as a side, snack or breakfast.
