Ingredients For spinach-cheese casserole

4eggs
-
2/3 cflour
-
2 pkgfrozen chopped spinach, thawed and squeezed dry (10 oz each)

24 ozlow-fat cottage cheese
-
3 cgrated reduced fat white cheddar cheese

1 tspsalt

1/4 tsppepper
How To Make spinach-cheese casserole

1Coat a 2 quart baking dish with cooking spray. Preheat over to 350.

2In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt and pepper. Spoon into baking dish and smooth top.

3Bake, uncovered, for 1 hour, or until heated thorough.

4Cooks note: This dish can be made up to two days ahed of time and kept in the refrigerator.
