Ingredients For spinach and feta cauliflower mash

  • 1 md
    head cauliflower cut into small florets
  • 2 Tbsp
    butter
  • 1/4 c
    sour cream
  • 5 oz
    fresh spinach cooked and drained with water squeezed out and chopped
  • 1/2 c
    feta cheese crumbled
  • 2
    green onions chopped
  • 2 Tbsp
    parsley
  • 1 clove
    garlic minced
  • salt and pepper to taste

How To Make spinach and feta cauliflower mash

  • 1
    Boil or steam the cauliflower until soft. Puree the cauliflower with the butter, sour cream, feta, garlic and parsley in a food processor. Add a little milk if needed to make it a mashed consistency.

    Stir in the spinach green onion and season with salt and pepper
