A lovely Ethiopian vegetarian dish to serve with injera bread. Feel free to add berbere or a little spice to give it a kick.

Ingredients For spinach and cheese saute ethiopian-style

  • 1 bunch
    spinach, tough stems removed and chopped
  • 1 c
    ayib - ethiopian cheese (cottage type cheese can be substituted)
  • 1 Tbsp
    nite kebbeh
  • 1
    onion, chopped
  • 1 tsp
    ginger, grated
  • 2 clove
    garlic,minced
  • salt and pepper to taste

How To Make spinach and cheese saute ethiopian-style

  • 1
    Melt the niter kibbeh in a large skillet and add onions, ginger and garlic. Saute until translucent.

    Add the chopped spinach and stir until it wilts. Then add the cheese, salt, and pepper and cook until slightly dry.

    Serve hot with injera.
