Ingredients For spicy okra

  • 4 c
    okra, trimmed and split lengthwise (seeded if necessary)
  • 1/4 c
    vegetable oil
  • 1 1/2 c
    red onion, minced
  • 2 c
    tomatoes, peeled, seeded and chopped (canned tomatoes will work)
  • 2 tsp
    fresh garlic, minced
  • 2 tsp
    fresh ginger, minced
  • 1/2 tsp
    ground cardamom
  • 2
    jalapenos, seeded and minced (or pepper of your choice)

How To Make spicy okra

  • 1
    In a medium saucepan, heat oil. Cook onions until lightly browned.
  • 2
    Add tomatoes and bring to a boil.
  • 3
    Lower heat and stir in garlic, ginger, and cardamom. Add the okra and cooked, uncovered, for 20 minutes (or to taste). Add chilies and cook 5 additional minutes.
