spicy mexican corn
I love corn......especially with Mexican dishes. I'm not able to find Mexicorn in my grocery stores anymore, so played around with a spicy version of my old favorite side that will work with my Mexican dishes.

Ingredients For spicy mexican corn

2 cfrozen corn

1/2green bell pepper, diced

1/2red bell pepper, diced

1/4red onion, finely diced

2 ozdiced green chiles, drained (1/2 can)

1/2 Tbspbutter

1 1/2 tspchili powder

2 tspcumin

salt and pepper, to taste

cilantro, optional
How To Make spicy mexican corn

1Combine all the ingredients in a medium saucepan.

2Heat, covered, for about 10-12 minutes.
