Ingredients For spicy corn casserole (for the crock pot)

2 Tbspbutter

1 lgonion, chopped

2green bell peppers, chopped

1/4 cflour

2 cfresh or frozen corn

2 ccooked long grain brown rice

1 can(14 1/2 ounce) low sodium diced tomatoes with liquid

2hard boiled eggs, chopped

2 1/2 cshredded low fat sharp cheddar cheese

2 Tbspworcestershire sauce
-
2 tsphot pepper sauce (or more to taste)

1/2 tspeach salt and pepper
How To Make spicy corn casserole (for the crock pot)

1In a large medium melt butter and then saute onion and bell pepper until tender. Stir in flour and when mixed remove from heat. Place this and all ingredients in crockpot. Mix. Cover and cook on low for 2-3 hours. Check on casserole while cooking and add tomato juice to your liking if corn begins to become too dry.
