Even my husband, who hates cooked carrots asks me to make these often. I've also thrown in 6-8 sliced white mushrooms.

Ingredients For spicy carrots

  • 2 Tbsp
    brown sugar
  • 1/4 c
    butter
  • 5 lg
    carrots, peeled and cut into disks
  • 1 clove
    garlic (largest one)
  • 3-4 dash
    tabasco sauce
  • 1 1/2 tsp
    emeril's essence (i don't actually measure this one, i go by taste)
  • 1/2 md
    red onion

How To Make spicy carrots

  • 1
    Melt butter with brown sugar and garlic.
  • 2
    Add carrots, cover and cook on low 5-8 minutes
  • 3
    Add onion. Cook until moisture disappears or when the carrots are crisp-tender.
